Ingredients

For the Salad

  • 2 cups cooked beets roasted, boiled, or store-bought
  • 1 can chickpeas drained and rinsed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/2 medium red onion thinly sliced

For the Dressing

  • 1 large lemon juice freshly squeezed
  • 3 tablespoons olive oil extra-virgin recommended
  • to taste salt
  • to taste black pepper

Preparation Steps

  • Dice the cooked beets into bite-sized cubes, and rinse and drain the canned chickpeas.
  • Thinly slice the red onion and chop the fresh parsley. Crumble the feta if not pre-crumbled.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper.
  • In a large mixing bowl, combine the diced beets, chickpeas, sliced red onion, and chopped parsley. Pour the dressing over and toss to combine.
  • Fold in the crumbled feta gently.
  • Chill for at least 15 minutes before serving.

Notes

Optionally serve over a bed of greens for added nutrients. This salad can be customized with different herbs and veggies as desired.
