  • Incorporate the Flour: Sprinkle the flour over the sautéed vegetables. Stir continuously for about 2 minutes until well incorporated.
  • Whisk in the Broth: Gradually whisk in the vegetable broth, ensuring no lumps. Add diced potatoes, salt, pepper, and optional herbs. Bring to boil, reduce heat and simmer for 15 minutes.
  • Add the Broccoli: Stir in broccoli florets and simmer for an additional 5-7 minutes until bright green and tender.
  • Blend for Smoothness: Use an immersion blender to partially blend the soup while keeping some chunks for a hearty feel.
  • Combine Milk and Cheese: Reduce heat to low, stir in milk and gradually add cheddar cheese, stirring until melted. Adjust seasoning.
