  • 2 large Eggs
  • 1/2 cup Unsalted Butter melted

  • Preheat your oven to 425°F (220°C) and place your cast-iron skillet inside to warm up.
  • In a large bowl, whisk together the cornmeal, all-purpose flour, baking powder, baking soda, and salt.
  • In a separate bowl, lightly beat the eggs, add buttermilk and melted butter, and mix until smooth.
  • Combine wet and dry ingredients by pouring the wet mixture into the dry mixture and stir gently.
  • Grease the hot skillet with butter or oil, then pour the batter evenly across the skillet.
  • Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool slightly before slicing and serve warm.
