Ingredients

For the Salad

  • 1.5 cups cooked chicken shredded
  • 1 cup pineapple chunks, diced
  • 0.5 cup celery diced
  • 0.25 cup green onions chopped
  • 0.33 cup dried cranberries

  • 0.5 cup mayonnaise or Greek yogurt

Instructions

Preparation

  • Begin by shredding 1 ½ cups of cooked chicken using your hands or two forks.
  • Dice 1 cup of pineapple chunks, ½ cup of celery, and ¼ cup of green onions into small, uniform pieces.
  • In a large bowl, mix the shredded chicken, diced pineapple, celery, green onions, and ⅓ cup of dried cranberries. Gently fold to combine.
  • In a separate bowl, whisk together ½ cup of mayonnaise, salt, and black pepper to taste. Adjust seasoning as needed.
  • Pour the dressing over your chicken mixture and gently fold until well-coated. Cover and refrigerate for at least 30 minutes.
