Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare the carrots by washing them thoroughly, peeling, and halving lengthwise if they are thick.
  • Combine melted butter, olive oil, honey, minced garlic, salt, and black pepper in a large mixing bowl.
  • Toss the prepared carrots in the honey mixture until they are evenly coated.
  • Spread the carrots in a single layer on a lined baking sheet.
  • Roast the carrots for 25–30 minutes, flipping them halfway through.
  • Garnish with chopped parsley before serving warm.

Notes

Drizzle with extra honey just before serving for an extra touch of sweetness.
