Equipment

  • Oven
  • baking sheet
  • Parchment paper
  • mixing bowl
  • Spoon

Ingredients

For the Squash

  • 1 medium Butternut Squash fresh for the best flavor
  • 2 tablespoons Olive Oil can be substituted with avocado oil
  • 1 teaspoon Salt adjust according to taste
  • 1/2 teaspoon Black Pepper freshly cracked elevates the dish

For Optional Seasoning

  • 1/2 teaspoon Garlic Powder optional, fresh garlic adds bolder flavor
  • 1 tablespoon Fresh Rosemary or Thyme optional, dried herbs work too

Instructions

Preparation

  • Start by peeling the butternut squash before cutting it in half lengthwise. Scoop out the seeds with a spoon and cut the flesh into 1-inch cubes to ensure even cooking.
  • In a large mixing bowl, toss the cubed squash with olive oil, salt, black pepper, garlic powder (if using), and any fresh herbs you choose. Make sure each piece is well coated for maximum flavor.
  • Arrange the seasoned squash in a single layer on a rimmed baking sheet lined with parchment paper. Be sure to leave space between the pieces to prevent steaming and to allow for that delicious caramelization.
  • Bake in a preheated oven at 425°F (220°C) for 25-30 minutes. Flip the squash halfway through to ensure it roasts evenly, until the edges are golden brown and the centers are tender.
  • Once done, let the squash rest for about 5 minutes before serving. This helps enhance the flavors. Adjust seasonings as needed before enjoying!

Notes

Consider a sprinkle of fresh herbs on top before serving for an extra touch of flavor. Leftovers can be stored in an airtight container for up to 4 days.
