Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the sweet potatoes thoroughly. Slice them into 1/2-inch thick rounds, leaving the skin on.
  • Toss the sweet potato rounds in a large bowl with olive oil, maple syrup, cinnamon, and salt until they are evenly coated.
  • Line a baking sheet with parchment paper. Arrange the sweet potato slices in a single layer.
  • Roast in the preheated oven for 20 minutes. Flip the slices and continue roasting for another 15–20 minutes.
  • Toast the walnuts in a small saucepan over medium-low heat with a tablespoon of maple syrup for about 3-4 minutes.
  • Transfer the roasted sweet potatoes to a serving platter. Drizzle with the maple-walnut glaze, and sprinkle with fresh thyme leaves.
