  • Sear the Pork: Heat olive oil in a skillet over medium-high heat. Sear the pork chops for 3–4 minutes on each side until they are golden brown. Remove the chops from the skillet and set aside.
  • Caramelize Onions: Lower the heat to medium and add butter along with the sliced yellow onions. Stir frequently for 20–25 minutes until the onions become deep golden and caramelized.
  • Add Aromatics: Mix in minced garlic and fresh thyme, cooking for about 1 minute until the garlic becomes fragrant and complements the sweet onions.
  • Deglaze the Pan: Pour in the beef broth to deglaze the pan, gently scraping up any browned bits to incorporate those delicious flavors. Let it simmer for a couple of minutes.
  • Nestle Chops: Return the seared pork chops to the skillet, pressing them into the onion mixture. Spoon some caramelized onions over the chops and simmer gently for 5 minutes.
