Ingredients

For the Chicken

  • 4 pieces Chicken Breasts boneless skinless, can substitute with thighs

For the Creamy Sauce

  • 1 cup Heavy Cream can substitute with half-and-half or coconut cream
  • 1 cup Chicken Broth opt for low-sodium
  • 1 cup Parmesan Cheese nutritional yeast can be a dairy-free alternative

For the Vegetables

  • 1 cup Cherry Tomatoes can substitute with canned diced tomatoes
  • 2 cups Fresh Spinach frozen can be used, thaw and drain
  • 1 medium Onion chopped, shallots can substitute
  • 4 cloves Garlic sliced

For the Seasoning

  • 1 teaspoon Italian Seasoning can use individual herbs like oregano and basil
  • 1 teaspoon Salt adjust to taste
  • 0.5 teaspoon Pepper adjust to taste

For Cooking

  • 1 tablespoon Olive Oil can substitute with other cooking oil

Instructions

Making the Dish

  • Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a skillet over medium-high heat. Sear the chicken for about 3 minutes on each side until golden brown.
  • In a bowl, whisk together heavy cream, chicken broth, garlic, onion, and Parmesan cheese until well combined and creamy.
  • Place the seared chicken in the slow cooker. Top it off with cherry tomatoes and fresh spinach, then pour the creamy sauce over the entire mixture.
  • Cover and set your slow cooker to LOW for 4 to 6 hours or HIGH for 2 to 3 hours. Cook until the chicken is tender and fully cooked through.
  • Garnish with additional Parmesan cheese and fresh parsley if desired. Serve hot over pasta, rice, or buttery mashed potatoes.

Notes

Searing the chicken first locks in moisture. Adjust seasoning to taste and consider adding other veggies for variety.
