Ingredients

For the Soup Base

  • 2 heads Garlic softneck variety recommended
  • 1 medium Yellow Onion sautéed until caramelized
  • 4 medium Yukon Gold Potatoes peeled and diced
  • 4 cups Chicken Broth or vegetable broth for vegan option

For Flavoring

  • 2 tablespoons Fresh Thyme Leaves always use fresh
  • 2 tablespoons Olive Oil for sautéing and roasting
  • to taste Salt
  • to taste Black Pepper

For Garnishing

  • 2 tablespoons Chives or Parsley for garnish

Instructions

Soup Preparation

  • Preheat the Oven to 375°F (190°C) to roast the garlic.
  • Prepare the Garlic by cutting the tops off the garlic heads, drizzle with olive oil, wrap in foil, and roast for 35-40 minutes until golden brown and tender.
  • Sauté the Onions in a large soup pot with olive oil, adding a pinch of salt, until translucent and caramelized, about 8-10 minutes.
  • Add the diced Yukon Gold potatoes to the pot with the sautéed onions and pour in the chicken broth. Bring to a boil, then reduce to a simmer for about 20 minutes, until fork-tender.
  • Incorporate the roasted garlic cloves and fresh thyme leaves into the soup, letting it simmer for another 5 minutes.
  • Blend the soup using an immersion blender or in batches until smooth.
  • Season with salt and black pepper as desired, ladle into bowls, garnish with chives or parsley, and serve hot with crusty bread.

Notes

Optional: Drizzle with olive oil or add a splash of cream before serving for extra richness.
