  • 3 cups shredded cooked chicken can use cooked turkey or rotisserie chicken
  • 4 cups fresh broccoli florets steam until tender-crisp
  • 1 cup plain Greek yogurt low-fat sour cream can be an alternative
  • 1 cup shredded cheddar cheese use freshly shredded for better melting
  • 1/2 cup grated Parmesan cheese can substitute with nutritional yeast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon Dijon mustard yellow mustard can be used
  • 1 cup low-sodium chicken broth replace with vegetable broth for vegetarian option
  • 1 tablespoon olive oil for sautéing

For Assembling

  • 1 cup additional cheddar cheese for topping

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13 baking dish.
  • Steam or blanch the fresh broccoli florets until bright green and tender-crisp, about 3-4 minutes. Drain and set aside.
  • In a medium saucepan, warm the olive oil over medium heat. Add chicken broth, Greek yogurt, Dijon mustard, garlic powder, onion powder, salt, and pepper. Whisk until smooth and slightly thickened, about 5 minutes.
  • In a large mixing bowl, combine the shredded chicken, steamed broccoli, and half of the cheddar cheese. Pour the creamy sauce over the mixture and stir gently.
  • Spoon the mixture into the prepared baking dish, spreading it evenly.
  • Sprinkle the remaining cheddar cheese and grated Parmesan cheese on top.
  • Bake uncovered for 20-25 minutes, or until the top is golden brown and bubbly.
  • Allow the casserole to rest for about 5 minutes before serving.
