  • 2 tablespoons Chipotle Peppers in Adobo Sauce Adjust quantity for milder taste.
  • 2 tablespoons Adobo Sauce

For the Creamy Sauce

  • 1 cup Mayonnaise Greek yogurt can substitute for a lighter option.
  • 2 tablespoons Honey
  • 1 tablespoon Lime Juice
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Olive Oil

For the Seasoning

  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1/4 cup Fresh Cilantro For garnish.

Directions

  • Trim and cube chicken thighs or breasts into uniform bite-sized pieces. Pat dry.
  • In a blender, mix chipotle peppers, adobo sauce, mayonnaise, honey, lime juice, soy sauce, olive oil, garlic powder, and onion powder. Blend until smooth.
  • Toss chicken cubes in the remaining marinade. Cover and refrigerate for 30 minutes to 2 hours.
  • Thread marinated chicken onto soaked wooden or metal skewers.
  • Preheat grill to medium-high. Grill skewers for 10-12 minutes, turning frequently.
  • Brush skewers with reserved marinade during the last 2 minutes of grilling.
  • Serve immediately, garnished with chopped cilantro and lime wedges.
