Ingredients

Cornbread Base

  • 3 cups Cornbread cubed and dried; day-old recommended

Filling

  • 1 pound Ground Sausage use turkey or chicken sausages for a lighter option
  • 1 cup Celery diced
  • 1 cup Onion diced
  • 2 tablespoons Fresh Sage chopped; can substitute with thyme or rosemary

Cooking

  • 1.5 cups Chicken Broth check for saltiness
  • 4 tablespoons Butter for sautéing vegetables

Seasoning

  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation

  • Bake cornbread ahead of time, let it cool, and cube it into 3 cups. Dry it in the oven at 250°F for 15-20 minutes if necessary.
  • In a sauté pan over medium heat, cook ground sausage until browned and crumbled. Set aside.
  • Melt butter in the same pan, add diced onion and celery, and sauté until softened, about 5-7 minutes. Add chopped sage in the last minute.
  • In a large bowl, combine cornbread, sausage, and sautéed vegetables. Pour in chicken broth and mix until moist but not soggy.
  • Transfer to a greased baking dish, cover with foil, and bake at 350°F (175°C) for 25 minutes. Remove foil and bake for another 15-20 minutes until golden brown.
  • Serve warm, garnished with fresh sage or parsley.

Notes

Consider adding diced apples for a touch of sweetness. Leftovers can be stored in an airtight container for up to 4 days.
