Ingredients

For the Chicken

  • 1 pound boneless, skinless chicken breasts or thighs Thighs are especially succulent.
  • 2 tablespoons olive oil Can be swapped with any neutral oil.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper Essential for enhancing natural flavors.

For the Cowboy Butter Sauce

  • 1/2 cup unsalted butter If using salted butter, reduce added salts accordingly.
  • 4 cloves garlic, minced Fresh garlic will give the best taste.
  • 1 teaspoon smoked paprika Regular paprika is a good substitute if needed.
  • 1 tablespoon Dijon mustard Yellow mustard can work in a pinch.
  • 2 tablespoons lemon juice Fresh lemons are preferred for that zesty touch.
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes Adjust according to your spice tolerance.
  • 1/4 teaspoon cayenne pepper Optional for additional heat.
  • 2 tablespoons water Used to thin out the sauce.

For Garnish

  • 2 tablespoons fresh parsley, chopped Can substitute with cilantro or other herbs.
  • 2 tablespoons chives, chopped

Instructions

Directions

  • Prep Chicken: Start by dicing the chicken into uniform, bite-sized cubes to ensure even cooking. Toss the chicken pieces with olive oil, smoked paprika, salt, and pepper for a flavor boost.
  • Sear Chicken: Heat a nonstick skillet over medium-high heat. Add the chicken in a single layer and cook for 6-8 minutes, turning occasionally until every side is golden brown and cooked through. When done, transfer the chicken to a plate.
  • Make Cowboy Butter Sauce: Reduce the heat and melt the unsalted butter in the same skillet. Stir in minced garlic, red pepper flakes, cayenne, Dijon mustard, lemon juice and zest, and a bit of water. Whisk until all ingredients are well blended, fragrant, and smooth.
  • Combine: Return the seared chicken to the skillet and toss it well in the buttery sauce. Allow it to cook for an additional 1-2 minutes until all pieces are nicely coated in the delicious sauce.
  • Garnish and Serve: Sprinkle fresh parsley and chives over the chicken bites for a pop of color and flavor. Serve immediately with lemon wedges for an extra zesty kick, if desired.
