How to Make Savory Butter Chicken Skillet

  • In a bowl, mix together Greek yogurt, garlic paste, ginger paste, garam masala, turmeric, chili powder, and salt. Add the chicken, ensuring it's evenly coated. Marinate for at least 30 minutes, or overnight for deeper flavor.
  • Heat a cast iron skillet over medium-high heat and melt 2 tablespoons of butter. Add the marinated chicken pieces in batches, searing until golden brown—about 5-7 minutes per side. Set aside when browned.
  • In the same skillet, melt the remaining butter and add garlic and ginger paste. SautĂ© until fragrant, about 1-2 minutes. Pour in the tomato puree, garam masala, turmeric, and chili powder. Let it simmer for 5-7 minutes until the sauce thickens slightly.
  • Return the seared chicken to the skillet, stirring to coat it in the rich sauce. Reduce heat to low and let it simmer for another 10 minutes. If the sauce becomes too thick, add a splash of water to reach the desired consistency.
  • Stir in the heavy cream and let simmer for an additional 2-3 minutes until the sauce is smooth and creamy. Taste and adjust seasoning if necessary.
  • Garnish with fresh cilantro and serve hot with your choice of fluffy basmati rice, warm naan, or even buttery mashed potatoes for a delightful twist.
