  • Pat the chicken thighs dry with paper towels and season generously with salt and black pepper.
  • In a heavy skillet, heat olive oil over medium-high heat. Add the chicken thighs skin-side down and sear for 7-8 minutes, until golden brown, then flip and cook for another 5 minutes. Remove and set aside.
  • Lower the heat and add butter to the skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in chicken broth, making sure to scrape the browned bits off the bottom. Simmer for about 3-4 minutes.
  • Stir in heavy cream, bringing it to a gentle simmer. Cook for about 5 minutes until the sauce thickens slightly.
  • Return chicken thighs to the skillet, skin-side up. Spoon sauce over chicken, cover, and simmer for 12-15 minutes until fully cooked through.
