Ingredients

For the Chicken

  • 2 lbs Chicken Thighs or Breasts cut into bite-sized cubes

For the Sauce

  • 3 pieces Chipotle Peppers in Adobo Sauce reduce for a milder flavor
  • 1 cup Mayonnaise Greek yogurt can be used for a healthier twist
  • 2 tbls Honey agave syrup or maple syrup can be substituted
  • 2 tbls Lime Juice fresh is best, bottled works in a pinch
  • 2 tbls Soy Sauce tamari works for a gluten-free option
  • 2 tbls Olive Oil any neutral oil can be used
  • 1 tbls Garlic Powder
  • 1 tbls Onion Powder

For Garnishing

  • 1 cup Fresh Cilantro optional but recommended

Instructions

How to Make Smoky Chipotle Bang Bang Chicken Skewers

  • Cut the chicken thighs or breasts into uniform, bite-sized cubes. Pat them dry to ensure a nice sear on the grill.
  • In a blender, combine the chipotle peppers, adobo sauce, mayonnaise, honey, lime juice, soy sauce, olive oil, garlic powder, and onion powder. Blend until smooth, creating a creamy, smoky delight.
  • Reserve a portion of the sauce for glazing the skewers later.
  • Toss the chicken pieces in the remaining sauce, coating them well. Cover and refrigerate for 30 minutes to 2 hours.
  • Thread the marinated chicken onto soaked wooden or metal skewers.
  • Preheat the grill to medium-high heat. Grill the skewers for about 10-12 minutes, turning frequently.
  • In the last 2 minutes of grilling, brush the skewers with the reserved sauce.
  • Remove the skewers from the grill. Garnish with fresh cilantro and serve with lime wedges.

Notes

For added texture, sprinkle with sesame seeds before serving.
