For the Salmon

  • 4 fillets Salmon Fresh for maximum flavor
  • 3 cloves Garlic Minced
  • 1 medium Lemon Sliced for topping
  • 2 tablespoons Olive oil Can substitute with avocado oil
  • 1 teaspoon Oregano Fresh or dried
  • 1 teaspoon Basil Fresh or dried
  • 1/2 teaspoon Red pepper flakes Omit for milder flavor

For the Potatoes

  • 1.5 pounds Baby potatoes Halved
  • 2 tablespoons Champagne vinegar Can substitute with lemon juice

For the Topping

  • 1 cup Feta cheese Can substitute with vegan feta
  • 1/2 cup Olives Variety of choice

  • Preheat your oven to 425°F (220°C).
  • Prepare the potatoes: Toss halved baby potatoes with olive oil, salt, and pepper in a large bowl. Spread them on a baking sheet and roast for 20 minutes.
  • Make the marinade: Mix olive oil, minced garlic, oregano, paprika, red pepper flakes, and a pinch of salt. Coat the salmon in this marinade.
  • After 20 minutes, push potatoes aside and place marinated salmon on the baking sheet. Top with lemon slices and a small pat of butter. Roast for an additional 10-20 minutes.
  • Make the dressing: Combine remaining olive oil, fresh herbs, olives, champagne vinegar, and optional fish sauce. Stir in roasted garlic paste if available.
  • Serve: Plate salmon and potatoes together, drizzle dressing, and crumble feta over the top.
