Equipment

  • Large skillet

Ingredients

For the Pasta and Meat

  • 1 lb Ground Beef can substitute with ground turkey or plant-based crumbles
  • 2 cups Elbow Macaroni can use rotini or penne if desired

For the Flavor Base

  • 2 tbsp Taco Seasoning homemade or store-bought
  • 1 can Diced Tomatoes with Green Chilies use plain diced tomatoes for less heat
  • 1 medium Chopped Onion use shallots or green onions as alternatives
  • 2 cloves Minced Garlic garlic powder can stand in if needed

For the Creamy Sauce

  • 2 cups Shredded Cheddar Cheese Monterey Jack or Pepper Jack adds a twist
  • 1 cup Milk use whole milk for richness or a lower-fat alternative
  • 2 cups Water used alongside milk for cooking the pasta

For Seasoning

  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

Cooking Steps

  • In a large skillet over medium heat, brown the ground beef with the chopped onions and minced garlic. Cook until the beef is no longer pink, about 5-7 minutes. Drain any excess grease.
  • Stir in the taco seasoning, diced tomatoes (with juices), salt, and pepper. Simmer for 2-3 minutes, allowing the flavors to combine beautifully.
  • Add the dry elbow macaroni, milk, and water to the skillet. Stir well and bring the mixture to a boil, watching closely to prevent it from bubbling over.
  • Reduce the heat, cover the skillet, and let it simmer for 12-15 minutes, or until the pasta is tender and most of the liquid is absorbed.
  • Remove the skillet from heat and fold in the shredded cheddar cheese until it melts completely, creating a creamy, dreamy sauce.
  • Serve hot, garnished with favorite toppings like sour cream, diced tomatoes, or sliced green onions.

Notes

For extra crunch, garnish with chopped cilantro or crushed tortilla chips. Freshly shredded cheese ensures optimal melting and a creamy texture.
