Instructions

Steps

  • Bring a large pot of salted water to a boil. Add egg noodles and cook until al dente, about 5-7 minutes. Drain and set aside.
  • In a large skillet over medium heat, melt 2 tablespoons of butter until bubbly but not browned.
  • Add 1/4 cup of all-purpose flour to the melted butter and whisk continuously for about 1 minute.
  • Gradually pour in 2 cups of chicken broth while whisking until the mixture is smooth and starts to thicken, around 2-3 minutes.
  • Add 1 cup of milk to the skillet, mixing until combined and sauce thickens slightly, about 3-4 minutes.
  • Toss in 1 cup of frozen peas and carrots and cook for 2-3 minutes until heated through.
  • Gently mix in 2 cups of cooked shredded chicken and simmer for another 2 minutes.
  • Add the cooked noodles to the skillet, folding them into the creamy mixture until coated.
  • Sprinkle in 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and season with black pepper and salt. Stir well.
  • Serve immediately, garnished with fresh parsley.

Notes

Use fresh vegetables for better flavor and texture. Leftover rotisserie chicken enhances flavor and saves time. For a dairy-free version, use plant-based milk and margarine. Cool completely before storing leftovers.
