Preparation

  • Preheat your oven to 300°F (150°C) and prepare a baking sheet. Spread the day-old bread cubes evenly and toast them for 15-20 minutes until lightly golden and completely dry. Allow them to cool completely before proceeding.
  • In a large skillet over medium heat, add the breakfast sausage. Cook it until browned and crispy, about 5-7 minutes. Remove it from the skillet but keep a bit of the fat to sauté the vegetables.
  • Melt the butter in the same skillet over medium heat. Add the diced onions and celery, sautéing for about 7-8 minutes until softened. Stir in the fresh herbs during the last minute of cooking.
  • In a large mixing bowl, combine the toasted bread cubes, cooked sausage, and sautéed onion-celery mixture. Gently mix until evenly distributed.
  • In a separate bowl, whisk together the egg and broth. Pour this mixture over the bread mixture, stirring gently until everything is well moistened and combined.
  • Pour the stuffing mixture into a greased 9×13-inch baking dish. Cover it tightly with aluminum foil and bake in the preheated oven at 350°F (175°C) for 30 minutes.
  • Remove the foil and continue baking for an additional 15-20 minutes, or until the top layer is beautifully golden brown and crispy.

Consider making the stuffing a day in advance and refrigerating it; just let it come to room temperature before baking.
