Cooking Instructions

  • Season the boneless chicken breasts or thighs with salt and black pepper. Heat olive oil in a large skillet over medium heat and sear the chicken until golden brown on both sides, about 4-5 minutes per side. Remove and set aside.
  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then, toss in the chopped sun-dried tomatoes, cooking for another minute.
  • Pour in the chicken broth and heavy cream, stirring to mix in the orzo. Bring to a gentle simmer, allowing the flavors to meld.
  • Lower the heat and let the orzo cook for 10-12 minutes, stirring occasionally until tender and creamy.
  • Once the orzo is cooked, return the seared chicken to the skillet. Add fresh spinach and cover for a few minutes.
  • Stir in the Parmesan cheese and Italian seasoning, allowing them to melt into the sauce. Serve hot, garnished with additional cheese and black pepper.

Notes

Optional: A sprinkle of fresh herbs like basil can enhance the dish.
