Preparation

  • In a large mixing bowl, beat together powdered sugar, sweetened condensed milk, and peppermint extract until a thick, pliable dough forms that isn't sticky to the touch.
  • Roll the dough into 1-inch balls and flatten each into discs. Place them neatly on a parchment-lined baking sheet. Chill in the refrigerator for at least 30 minutes to ensure they become firm.
  • In a double boiler or microwave-safe bowl, melt the dark or semi-sweet chocolate chips along with the coconut oil, stirring until silky smooth and free of lumps.
  • Using a fork, dip each chilled peppermint disc into the melted chocolate, allowing excess chocolate to drip off before placing them back onto the parchment.
  • Refrigerate the dipped patties for about 20-30 minutes, or until the chocolate is completely set. Store in an airtight container.

Notes

Optional: Drizzle extra melted chocolate on top for an elegant touch. Keep water away from melted chocolate to prevent it from seizing.
