For the Chicken

  • 1 pound Boneless Skinless Chicken Breasts Consider using pre-cooked rotisserie chicken for quicker option.
  • 8 ounces Cream Cheese Cubed for even melting.
  • 1 can Cream of Chicken Soup Can swap with cream of mushroom.
  • 1 can Rotel Tomatoes Essential for flavor and heat.

For Flavoring

  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

For the Pasta

  • 8 ounces Spaghetti Noodles Opt for gluten-free for dietary needs.
  • 1.5 cups Shredded Cheddar Cheese Use freshly shredded for best results.

Instructions

Preparation

  • Place boneless skinless chicken breasts in the bottom of your crockpot. Season with garlic powder, onion powder, salt, and black pepper.
  • Cube cream cheese and dot it over the chicken. Pour cream of chicken soup and Rotel tomatoes on top.
  • Cover the crockpot and cook on low for 6 hours or high for 3-4 hours until chicken is fork-tender.
  • Shred the chicken in the crockpot and stir to blend with the sauce.
  • Boil spaghetti noodles according to package instructions until al dente, drain and set aside.
  • Add cooked spaghetti noodles to the crockpot and mix until fully coated with the sauce.
  • Sprinkle shredded cheddar cheese on top, fold it in until melted and creamy. Let sit for 5-10 minutes before serving.

Notes

Garnish with freshly chopped parsley for added color and flavor. Perfect for meal prep and leftovers taste even better the next day.
