Ingredients

For the Chai

  • 2 cups Cold Water Use in stages
  • 1 tablespoon Green Tea Leaves Loose-leaf preferred
  • 1/4 teaspoon Baking Soda Essential for pink color
  • 2 cups Whole Milk Avoid low-fat for richness
  • to taste tablespoon Sugar Optional
  • 2-3 pods Cardamom Lightly crushed

For Garnishing

  • 2 tablespoons Crushed Pistachios Garnish just before serving
  • 2 tablespoons Rose Petals Dried and edible

Instructions

Preparation

  • In a heavy-bottomed saucepan, combine 2 cups of cold water, 1 tablespoon of green tea leaves, and 1/4 teaspoon of baking soda. Bring to a vigorous boil, then reduce heat and simmer for 15 minutes.
  • Pour in 1 cup of ice-cold water to the boiling tea. Whisk vigorously for about 3 minutes to aerate the mixture and enhance the color.
  • Add another cup of cold water, continue whisking, and simmer for an additional 10-12 minutes until achieving a reddish hue.
  • Stir in 2 cups of whole milk and the lightly crushed cardamom pods. Gently simmer, stirring occasionally, until the tea turns a lovely pink. Add sugar to taste if desired.
  • Using a fine mesh strainer, pour the tea into cups to ensure a smooth texture.
  • Garnish with crushed pistachios and rose petals just before serving.

Notes

Serve with traditional Kashmiri breads or light biscuits for an elegant experience.
