  • 2 cups Blueberries Fresh or frozen; simmer longer for frozen.
  • 2 tbsp Cornstarch Can substitute with flour.
  • 1 tbsp Lemon Juice

For Assembly

  • 1 large Beaten Egg For egg wash.
  • 2 tbsp Powdered Sugar For dusting before serving.

Preparing the Pastry

  • Prepare the Compote: In a medium saucepan, combine the blueberries, sugar, lemon juice, and cornstarch over medium heat. Stir gently until thickened and the berries begin to burst. Allow this delightful mixture to cool completely.
  • Mix the Filling: In a mixing bowl, beat together the softened cream cheese, sugar, vanilla extract, and egg yolk until smooth and creamy. This will create a luscious, rich filling.
  • Roll the Pastry: Lightly flour your work surface and roll out the thawed puff pastry. Cut it into squares or rectangles, depending on your desired size for the pastries.
  • Assemble the Pastries: Spread a generous spoonful of the cream cheese filling onto the center of each pastry piece, then top it with the cooled blueberry compote.
  • Seal the Edges: Fold each pastry over and use a fork to seal the edges tightly, ensuring all flavors stay inside during baking.
  • Egg Wash: Brush the tops of the sealed pastries with the beaten egg for that beautiful glossy finish.
  • Bake to Perfection: Preheat your oven to 400°F (200°C) and bake the pastries for 15-18 minutes or until beautifully puffed and golden brown.
