  • 2 cups mixed vegetables fresh onions, bell peppers, and spinach

  • 1 cup salsa store-bought or homemade
  • 1 medium avocado or guacamole
  • 1/4 cup fresh cilantro or parsley as a substitute

Preparation Steps

  • Start by chopping the vegetables into small pieces and setting them aside. In a separate bowl, whisk the eggs (or tofu) until well combined and fluffy.
  • Heat a skillet over medium heat, then sauté the chopped onions and bell peppers until they soften and turn translucent, about 5-7 minutes. Add fresh spinach and cook until just wilted.
  • Pour the whisked eggs (or tofu) into the skillet, scrambling gently until just set. Season with salt and pepper to taste, then remove from heat.
  • Lay a tortilla flat on a clean surface. Add a generous portion of your cooked egg and vegetable mixture, then sprinkle with your choice of cheese, dollops of salsa, and slices of avocado.
  • Fold in the sides of the tortilla first, then roll it tightly from the bottom up to fully enclose the filling. Repeat with any remaining tortillas.
  • In the same skillet, place the burritos seam-side down and cook over medium heat until golden brown and crispy, about 3-4 minutes on each side.
  • Once crispy, slice the burritos in half and serve warm with additional salsa and a sprinkle of cilantro for garnish.
