Steps to Prepare

  • In a skillet over medium heat, combine diced apples, granulated sugar, cinnamon, lemon juice, and a splash of water. Cook until the apples are tender, about 8-10 minutes.
  • Mix cornstarch with a bit of water, then add it to the cooked apples. Stir and cook until the mixture thickens. Set it aside to cool while you whip up the batter.
  • In a large bowl, whisk together the all-purpose flour, baking powder, brown sugar, cinnamon, nutmeg (if using), and salt.
  • In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract.
  • Gently fold the wet ingredients into the dry mixture until just combined. A few lumps are perfectly fine.
  • Preheat your waffle iron and lightly grease it.
  • Pour the batter into the preheated waffle iron and cook until golden and crisp, about 3-5 minutes.
  • Top your warm waffles with the apple filling and serve immediately with optional toppings like vanilla ice cream or drizzled caramel.
