  • Combine chili powder, paprika, cumin, garlic powder, and salt in a bowl. Coat the chicken thoroughly and let it marinate for 15-20 minutes, or even overnight for deeper flavors.
  • Heat a skillet over medium-high heat. Sear each side of the marinated chicken until deeply golden and fully cooked, about 6-7 minutes per side. Allow it to rest before slicing to retain its juicy goodness.
  • In the same skillet, add corn kernels and cook until they are lightly charred and start to pop, roughly 4-5 minutes.
  • In a small bowl, whisk together sour cream, lime juice, chopped cilantro, and a pinch of salt. If too thick, add a little water until you reach your desired drizzle consistency.
  • Begin with a generous layer of cooked rice at the bottom of a bowl. Add sliced chicken, charred corn, diced red onion, and top with a drizzle of the creamy sauce.
