Ingredients

For the Soup Base

  • 4 pieces Bone-in skinless chicken provides rich flavor for the broth
  • 2 carrots Carrots fresh and peeled
  • 2 stalks Celery diced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 6 cups Low-sodium chicken broth
  • 1 leaf Bay Leaf remove before serving
  • 1 tsp Fresh thyme or adjust dried as needed

For the Dumplings

  • 2 cups All-purpose flour or gluten-free if necessary
  • 1 tbsp Baking powder ensure freshness
  • 1 cup Milk or buttermilk/non-dairy alternatives
  • 1/2 cup Unsalted butter melted
  • 1 tsp Salt or to taste
  • Pepper to taste

Instructions

Cooking Steps

  • Heat oil in a Dutch oven, add chopped onions, carrots, and celery. Sauté for 5-7 minutes until softened, then add minced garlic and sauté for another minute.
  • Add bone-in chicken pieces to the pot along with chicken broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer covered for 30-35 minutes.
  • Carefully remove the chicken from the pot, shred it using forks, and return the shredded meat back to the pot.
  • In a bowl, combine all-purpose flour, baking powder, and salt. Stir in melted butter and milk until a sticky dough forms.
  • Drop spoonfuls of the dumpling dough onto the simmering soup. Cover the pot and let them cook for 15 minutes.
  • Once the dumplings are fluffy and cooked through, season the dish to taste with salt and pepper, stir gently, and serve warm.
