For the Pasta

  • 1 cup Elbow Macaroni Can substitute with shells, rotini, or penne.
  • to cover Water or Beef Broth Vegetable broth for vegetarian option.

For the Finish

  • 1 medium Onion Yellow or white onions work best.
  • 2 cloves Garlic Fresh is recommended.
  • 1 cup Shredded Cheddar Cheese Monterey Jack or pepper jack can be used.

Instructions

How to Make Hearty Chili Mac

  • Heat a large Dutch oven over medium heat. Add ground beef and cook until browned, about 5-7 minutes, breaking it into pieces until no pink remains.
  • Add diced onion and minced garlic, sautéing for 2-3 minutes until softened and fragrant.
  • Stir in diced tomatoes, tomato sauce, kidney beans, chili powder, cumin, paprika, salt, and pepper. Simmer for 10-15 minutes.
  • Add uncooked elbow macaroni and enough water or broth to cover everything. Bring to a boil, reduce heat, and simmer uncovered for about 10 minutes.
  • Remove from heat and stir in shredded cheddar until melted and creamy. Serve immediately while hot.

Notes

For an extra kick, top with sliced jalapeños or a dollop of sour cream.
