  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Chipotle Chili Powder optional
  • 1/2 teaspoon Black Pepper season to taste

For the Avocado Corn Salsa

  • 2 pieces Avocados firm but ripe
  • 1 cup Cherry Tomatoes or Roma Tomatoes
  • 1 cup Sweet Corn canned, drained if fresh unavailable
  • 1/4 cup Red Onion diced
  • 1 piece Red Bell Pepper diced
  • 1 piece Jalapeño adjust based on spice preference
  • 1/4 cup Cilantro optional
  • 1 clove Garlic fresh or powder for depth

Instructions

Preparation

  • Prepare the Wet Rub: In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, and other ground spices until well mixed.
  • Coat Chicken: Generously apply the wet rub over the chicken breasts, ensuring every nook and cranny is covered. Let it marinate for at least 30 minutes.
  • Cook Chicken: Grill or pan-sear the chicken over medium-high heat for 5-7 minutes on each side until golden brown and internal temperature reaches 165°F.
  • Rest Chicken: Remove the chicken from heat and let it rest for about 5 minutes before slicing.
  • Prepare Avocado Corn Salsa: In a medium bowl, gently combine chopped tomatoes, corn, red onion, red bell pepper, jalapeño, and cilantro. Carefully fold in diced avocados before serving.
  • Serve: Plate the warm chicken and top generously with Avocado Corn Salsa. Squeeze extra lime juice on top to elevate flavors.
