Ingredients

For the Base

  • 1 lb Baby Yellow Potatoes or Yukon Gold/red potatoes
  • 1 lb Ground Beef (80/20) or leaner with extra oil
  • 3 cloves Garlic minced
  • 1 tsp Red Chili Flakes adjust for desired heat

For Seasoning

  • 1 tsp Smoked Paprika or regular paprika
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper adjust to taste

For Cooking

  • 2 tbsp Oil for Frying neutral or light olive oil

For Garnish

  • 2 tbsp Chives chopped, or green onions

Instructions

Cooking Steps

  • Slice baby yellow potatoes in half. Heat oil in a heavy skillet over medium-high heat. Place the potatoes cut-side down and cook for 6-8 minutes until golden. Flip and cook for an additional 3 minutes until fork-tender. Remove and set aside.
  • In the same skillet, add ground beef. Break it apart with a spoon and cook until it’s nicely browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in minced garlic, red chili flakes, smoked paprika, salt, and pepper. Cook for 1-2 minutes until fragrant.
  • Gently fold the seared potatoes back into the skillet with the beef for 2-3 minutes, allowing everything to heat through.
  • Turn off the heat, sprinkle with chopped chives, and serve hot.

Notes

For an extra pop of flavor, drizzle with a splash of hot sauce before serving. Use a heavy-bottomed skillet for maximum crispiness.
