Instructions

How to Make

  • Preheat the oven to 375°F (190°C).
  • In an 8–10 inch oven-safe skillet, heat 1 tablespoon of olive oil over medium heat. If using, add chopped onions and minced garlic, cooking until soft (about 2-3 minutes). Then, add 2 cups of fresh spinach and sauté until wilted.
  • In a mixing bowl, crack in 6 large eggs and whisk them with 2 tablespoons of milk (if using), 1/4 teaspoon salt, and 1/8 teaspoon black pepper until smooth. Stir in half of the crumbled feta cheese.
  • Spread the cooked spinach mixture evenly across the skillet. Gently pour the egg mixture over the spinach and sprinkle the remaining feta on top.
  • Let it cook on medium heat for 2-3 minutes until the edges begin to set.
  • Transfer the skillet to your preheated oven and bake for 10-15 minutes, or until the center is set and slightly golden.
  • Allow the frittata to cool for a few minutes before slicing into wedges and serving warm.

Notes
