Preparation

  • Preheat your oven to 325°F (163°C). Prepare your 9-inch springform pan by lining the bottom with parchment paper and wrapping the outside with foil.
  • In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter until moistened. Press into the bottom of the prepared pan. Bake for 8-10 minutes until set, then let it cool.
  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla, mixing well. Incorporate eggs one at a time, then pour the filling into the cooled crust.
  • Toss diced Granny Smith apples with cinnamon and nutmeg until coated. Layer the spiced apples over the cheesecake filling.
  • In another bowl, combine brown sugar, flour, oats, and cold cubed butter, mixing until crumbly. Sprinkle the streusel over the apples evenly.
  • Bake for 55-65 minutes until the center is slightly jiggly but set. Turn off the oven and crack the door, letting it cool gradually for an hour.
  • Transfer the cheesecake to the refrigerator and chill for at least 4 hours or overnight to enhance flavors.
  • Warm the caramel sauce and drizzle it over each slice just before serving.
