Instructions

Making the Cheesecake

  • Preheat your oven to 325°F (163°C).
  • Mix graham cracker crumbs with granulated sugar and melted butter. Press into the bottom of a lined 9-inch springform pan and bake for 8-10 minutes. Allow it to cool once done.
  • In a large mixing bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract. Incorporate eggs one at a time, mixing well after each addition.
  • Toss diced Granny Smith apples with cinnamon and nutmeg, then spread this mixture evenly over the cheesecake filling.
  • Combine brown sugar, all-purpose flour, oats, and cinnamon. Cut in cold, cubed butter until it resembles coarse crumbs. Sprinkle generously over the apple layer.
  • Bake for 55-65 minutes. The center should jiggle slightly. Turn off the oven, crack the door, and allow to cool gradually inside.
  • Chill the cheesecake for at least 4 hours, preferably overnight, before serving.
  • Warm caramel sauce before drizzling over each slice before serving.
